Ingredients
1 Tbsp. olive oil
3 large sweet potatoes (About 2.5 pounds) peeled and cut into 1/2 inch cubes
2 1/2 cups onion, chopped
2 cans (15 oz. each) reduced sodium black beans
2 cans (14.5 oz. each) no salt added diced tomatoes
2 Tbsp. chili powder
3 garlic cloves (3 tsp.), minced
1 tsp. ground cumin
1/4 tsp cayenne pepper
1/4 cup brewed coffee
2 Tbsp. honey
1/2 tsp. salt
1/4 tsp. black pepper, ground
OPTIONAL TOPPINGS

Sweet potato black bean chili with a secret ingredient: coffee.
It sounds weird, but tastes incredible. The coffee adds depth without making it taste like your morning brew, and a touch of honey balances the heat perfectly. Hearty, healthy, and surprisingly easy. One pot, 45 minutes, done.
Top it with cheese, pickled onions, or green onions and you've got a meal that tastes way more complex than the effort required.
1. Heat a large pot or pan over medium heat. Add olive oil, sweet potatoes, and onion. Cook, stirring occasionally, until onions become tender, about 8 to 10 minutes.



2. Stir in black beans and tomatoes.



3. Add chili powder, garlic, cumin, and cayenne pepper.

4. Stir in coffee, honey, salt, and pepper.

5. Bring mixture to a boil. Reduce heat to low, cover, and simmer until sweet potatoes are tender, about 30 to 35 minutes. Stir every 10 minutes.
6. Serve with optional toppings.
Yield: 9 Servings, About 1 1/4 Cup Per Serving


You can freeze individual portions for easy re-heating later.
Microwave on high for approximately 2 minutes. Stir and microwave on high again for 45 more seconds. Keep the container open a little to allow steam to escape.
