Ingredients
1 medium head red cabbage (About 8 cups.), shredded
olive oil spray (About 1 Tbsp.)
2 1/2 cups onion, quartered and sliced
1 medium apple (About 7 oz.), chopped
1/3 cup allulose sweetener
(We used Swerve allulose blend sweetener.)
1 Tbsp. Splenda brown sugar
1/3 cup white vinegar
1/3 tsp. salt
1/4 tsp. black pepper
Experience the rich flavors of traditional German red cabbage—a unique blend of sweet, sour, and gentle spices. This side dish, made with shredded red cabbage, sliced apples, and basic pantry items, offers a colorful and tender addition to any meal.
1. Shred the red cabbage. Start by removing the outer leaves. If the core extends below the bottom, slice it off before proceeding. Cut the cabbage into quarters and cut away the core.
Then, cut into thin slices. If you like finely shredded cabbage, cut it very thin and set aside.
2. Heat a large Dutch oven or pot over medium heat. Once it's hot, lightly coat it with olive oil spray.
3. Add the onion and apple, cook until tender about 5-7 minutes.
4. Stir in the remaining ingredients, reduce heat to low, cover and cook for about 1 hour, stirring occasionally. Once it's finished, you can serve it warm or cold. Cover and store it in the refrigerator for up to 3 days.
Yield: 6 Servings, 1 cup per serving
