Ingredients
2 Tbsp. low-fat butter
(We used I can't believe it's not Butter! Light)
3 cups sweet onions, chopped
buttery cooking spray
2 medium potatoes (5 oz. each), sliced
1 large zucchini (10 oz.), sliced
12 oz. grape tomatoes (2 cups), sliced
1 tsp. kosher salt
3/4 tsp. black pepper
2 Tbsp. low-fat butter

1/3 cup Parmesan cheese, freshly grated
The ingredient list is simple. But when it's all layered and baked together, the result is savory deliciousness.
1. Heat a non-stick pan over medium heat. Once the pan is hot, add 2 tablespoons of the butter and melt it.
2. Add the onions and saute them for 10-12 minutes, until tender.
3. Lightly coat a 10-inch quiche dish (or a 10 x 8 casserole dish) with buttery cooking spray.
4. Put the onions into the quiche or casserole dish you've prepared.
5. Thinly slice the potatoes; they will fill about 2 cups.
6. Thinly slice the zucchini; it will fill about 2 cups.
7. Slice the grape tomatoes into thirds; they fill about 2 cups.
8. Preheat oven to 375 degrees Fahrenheit.
9. Divide the potatoes and zucchini into 3 piles each. Divide the sliced grapes into 2 piles.
10. Layer the first pile of potatoes and zucchini over the onions.
11. Layer one cup of the tomatoes next.
12. Layer the second pile of potatoes and zucchini over the tomatoes.
13. Layer the second (and last) cup of the tomatoes next.
14. Layer the last pile of potatoes and zucchini over everything.
15. Evenly sprinkle the salt and pepper over everything. Then pour melted butter evenly over the top. Cover with aluminum foil and bake at 375 degrees Fahrenheit for 30 minutes.
16. Remove from the oven and take off the foil. Then sprinkle the Parmesan cheese over the top. Put back in the oven, uncovered, for 35 to 40 more minutes
.
17. It's finished when the cheese and vegetables start to turn golden brown. Take it out of the oven and let it stand for 10 minutes before cutting and serving.
Yield: 6 Servings
You can freeze individual servings for easy re-heating later.
Microwave on high for approximately 1.5 minutes. Keep the container open a little to allow steam to escape.
