Ingredients


1 tsp. olive oil

4 cloves of garlic (4 tsp.), minced

2 cups white onion, diced

1 cup mushrooms of choice, gently cleaned with a towel and chopped

3 sprigs of rosemary, stemmed and minced

2 Tbsp. thyme, minced

1/2 cup Marsala wine (or dry white wine as alternative)

4 cups low sodium vegetable stock

3/4 cup dried mushroom of choice, ground into a mince (using a blender, coffee or spice grinder)

1 Tbsp. maple syrup

2 Tbsp. whole grain flour (any kind)

3 Tbsp. nutritional yeast

2 Tbsp. tamari or low sodium soy sauce

1/2 tsp. black pepper, ground

1/2 tsp. sea salt


This recipe tastes great served on top of Easy Mashed Potatoes and Country Fried Crispy Tofu Turkey.

1. Heat a shallow pot or large non-stick sauté pan on medium heat. Add the oil, garlic and onion. Stir until the onions start to turn translucent.

2. Mix in the fresh mushrooms, rosemary and thyme. Continue to sauté for a few minutes, until they begin to stick.

3. Add the wine to deglaze the pan and cook for another 3 minutes.

4. Stir in the vegetable stock, dried mushrooms and maple syrup and bring to a simmer. Simmer for about 10 minutes.

5. In a bowl mix together the flour and nutritional yeast. Stir it into the stock.

6. Mix in the soy sauce or tamari. Turn the heat up to medium or medium-high and stir constantly for about 2 minutes.

7. Add salt and pepper then serve.
