Ingredients
Trader Joe's Beef Birria 1 Serving (1 cup) (Frozen Package 2 Servings Per Package.)
(If you've made Birria from scratch, you need 3/4 cup of the meat and 1/4 cup of sauce for the sandwich.)

2 Slices Whole Wheat Bread
(We used Dave's Killer Bread Good Seed 70 Calories Per Slice.)
2 Tbsp. fat free mayonnaise
1 slice cheese (We used Pepper Jack Cheese)
Birria grilled cheese. We took our inspiration from a dish served at Disneyland, swapped in Trader Joe's frozen beef birria to keep it weeknight-friendly, and built it on Dave's Killer Bread with Pepper Jack cheese and a little fat-free mayo. The result is smoky, savory, melty, and just a little bit ridiculous in the best possible way. Sometimes the best food experiments start with "what if we just..."

1. Heat 1 cup Trader Joe's frozen beef birria (half a package) according to package directions. The microwave works fine and keeps it quick.
2. Heat a frying pan over medium heat.
3. Spread one tablespoon of mayo on one side of each slice of bread.
4. Build the sandwich: Place one slice of bread mayo-side down in the pan. Top with the cheese, then the birria meat, and finally the second slice of bread mayo-side up.




5. Grill both sides: Cook until the bottom is golden brown, about 1 to 2 minutes. Flip and cook the other side for another 1 to 2 minutes.

6. Remove from heat, slice in half, pour a little sauce from the birria on top and eat right away.
