Ingredients
2 cans (5 ounces each) reduced-sodium white chicken in water
OR
2 cans (5 ounces each) reduced-sodium tuna in water
2 large whole eggs
1 tsp. baking powder
1/4 tsp. olive oil (for greasing)
1/2 tsp. everything bagel seasoning
I didn't believe this until I made it myself.
You take canned chicken (or tuna), blend it with eggs and baking powder, and somehow it transforms into bread. Actual bread. Not meat loaf. Not a hockey puck. Bread. It's high protein, low carb, and surprisingly good.
Top it with sugar-free jam and you've got yourself a legitimately tasty treat that sounds fake but isn't.
1. Preheat oven to 350 degrees Fahrenheit.
2. Drain cans completely, removing excess liquid.
3. Place chicken or tuna in a food processor. Add eggs and baking powder.

4. Process for about 30 seconds until smooth.

5. Lightly coat two ramekins with olive oil. The ones we used were 4 inches across.


6. Divide mixture between the two ramekins and sprinkle everything bagel seasoning on top.


7. Bake for 22 to 25 minutes, until the sides start to brown.

8. Remove from oven and let cool for 5 minutes before serving.

Serving suggestion: Top with 2 tablespoons of sugar-free jam for a delicious treat.
