Ingredients
1 8-inch cucumber (About 11 oz.), thinly sliced (Filling 3 cups.)
8 oz. imitation crab (Leg Style), chopped
2 sheets seaweed wraps, cut into small pieces
3 Tbsp. rice vinegar
1 1/2 Tbsp. reduced sodium soy sauce
1 Tbsp. ginger paste
2 Tbsp. spicy relish
(We used Wickles Original Relish but any spicy relish works.)
Low carb, high flavor. Everything you love about a California roll: cucumber, crab, seaweed, and ginger, all in a salad that takes 10 minutes to make.
1. Prep the salad: Thinly slice the cucumber and place in a large bowl. For a less chewy texture, peel the cucumber before slicing.

2. Chop imitation crab and add to the bowl along with the seaweed wraps, cut into small pieces. Toss to combine.





3. Make the dressing: In a small bowl, whisk together the rice vinegar, soy sauce, ginger paste and spicy relish.

4. Dress and serve: Pour the dressing over the salad and toss until evenly coated. Divide into 4 servings and enjoy immediately.
