Ingredients

1 1/4 pounds 93% lean ground beef

2 cups diced onion

3 Tbsp. Worcestershire sauce


6 slices whole wheat bread

2 Tbsp. Everything Bagel Seasoning, divided


1 can (14.5 oz.) shredded sauerkraut

10 oz. (About 5 cups) angel hair coleslaw (Finely shredded green cabbage.)

3 Tbsp. apple cider vinegar

1/4 cup allulose sweetener

1/4 cup monk fruit sweetener

2 tsp. yellow mustard

1 cup sharp cheddar cheese, shredded

1 cup fat free cheddar cheese, shredded


A bierock is a German stuffed bread with beef, cabbage, and onion. This is that, but deconstructed into a salad so I can eat twice as much and call it healthy.

If you want to save time, you can replace STEP 3 where you turn the bread into croutons and simply use store-bought croutons.

1. Preheat oven to 350°F. Line a baking sheet with parchment paper.

2. Heat a large pan over medium-high heat and spray with olive oil. Add the beef, breaking it into small pieces, and cook 2 minutes. Add the onion and Worcestershire sauce. Cook until beef is browned and onions are soft, about 5 minutes. Set aside to cool.

You can refrigerate for up to 3 days. Keep croutons separate. Reheat salad 45 seconds before serving.
