Ingredients


8 cups (about 12 oz.) mixed salad greens

1 1/2 cups celery, chopped

2 medium bell peppers (any color), chopped
(We used one green and one red.)

2 cups red onion, chopped

10 oz. (about 2 1/2 cups) frozen peas, thawed

1 cup light mayonnaise

1 cup fat free sour cream

2 Tbsp. Splenda

1 3/4 cups fat free cheddar cheese, shredded


This is a delicious, crunchy salad. The original version was over 70% fat, so we reworked it to dramatically lower the fat while keeping all the taste.

1. Place the mixed salad greens in a large bowl OR a 13x9 inch casserole dish. Then, proceed to layer in the following order.

6. Whisk together the next three ingredients: mayonnaise, sour cream, and Splenda. Then, spread the mixture over the top.

7. Sprinkle the cheese over the top, cover, and refrigerate for 12 hours or overnight.

8. When you're ready to serve, mix/toss the salad together.

9. Divide into 8 servings and enjoy. This will stay good in the refrigerator for another two days.
