1 medium (About 7 oz.) zucchini, sliced

1 1/2 cups red onion, chopped

1 1/2 cups tomatoes, chopped

1/2 cup pitted black olives, cut in half

2 Tbsp. fresh basil, minced

18 oz. cheese tortellini (frozen or fresh)

olive oil spray

1 pound 93% lean ground beef

1 jar (24 oz. or 2.5 cups) marinara or spaghetti sauce
(We used a 24 oz. jar of Prego Roasted Garlic & Herb.)

1/2 cup water

1/4 tsp. black pepper, ground

1/2 cup feta cheese crumbles

This Greek tortellini skillet recipe is a hearty and flavorful dish that's quick and easy to make.

1. Prep the ingredients and set them aside. Slice the zucchini, chop the onion and tomatoes, cut the olives and mince the basil.

2. Cook the tortellini according to the package instructions. Then, set aside.

3. While the tortellini is cooking, heat a large skillet over medium heat. Once it's hot, lightly coat it with olive oil spray, then add the ground beef, zucchini, and onions. Keep turning and breaking the meat apart until it's browned and no longer pink.

4. When the tortellini is done, drain the water and set it aside.

5. When the beef is browned, stir in the tortellini. Then add the spaghetti sauce, water and black pepper. Bring to a boil, then reduce heat to low and simmer, uncovered for 5 minutes.

6. Add the tomatoes, olives and basil. Cook for an additional minute.

7. Divide into six servings of about 1 1/2 cups each. Sprinkle the feta cheese crumbles over the top of each serving, about 1 1/3 tablespoons over each.

Yield: 6 Servings, 1 1/2 Cups Per Serving

Keep the container open a little to allow steam to escape. Microwave on high for approximately 2 minutes, stir and microwave for another 2 minutes to heat through.
