Ingredients
1 cup diced apple (About 1 medium apple.)
1 tablespoon lemon juice
1 1/2 teaspoons ground cinnamon
3 teaspoons Splenda (Or any zero-calorie sweetener.)
1/2 cup 1-minute oats (Quick-cook oats are key.)
1 scoop (1/3 cup) protein powder

1/8 teaspoon salt
1/2 cup fat-free cottage cheese
3 tablespoons water

Prep the Apples
1. Place 1 cup of diced apple into a microwave-safe bowl or dish (4.5 x 6.5 inches works well).

2. Drizzle with 1 tablespoon of lemon juice.
3. In a small bowl, stir together the cinnamon and Splenda. Sprinkle TWO teaspoons of this mixture over the apples.

4. Microwave the apples on high for 1 minute.
Make the Oat Mixture
6. In a separate bowl, mix the oats, protein powder, salt and ONE teaspoon of the cinnamon mix..

7. Stir in the cottage cheese until combined.

8. Add the water and mix together (the texture will be thick).

Assemble
9. Spoon the oat mixture evenly over the partially cooked apples.

10. Sprinkle the remaining cinnamon mixture on top.

Finish Cooking
11. Microwave on high for 45 seconds. If you prefer a softer crumble, microwave an additional 15 seconds.
12. Let it cool slightly (it’ll be hot!) and dig in.
