Ingredients


1 cup water

1/3 cup uncooked pearled barley

1/3 cup fat free milk
(We used Fairlife Fat Free Ultra-filtered milk.)

1 tsp. Splenda brown sugar blend

1/4 tsp. ground cinnamon

1/8 tsp. nutmeg

2 Tbsp. chopped walnuts

3 Tbsp. fresh apples, chopped


This is a delicious, high-fiber alternative to oatmeal. We used pearled barley instead of hulled barley because it cooks in less time. You can make extra servings and store them in the refrigerator for up to 3 days.

1. Bring the water to a boil in a small saucepan over high heat.

2. Add the barley, bring back to a boil, then reduce heat to low. Stir, cover and cook on low for 35-40 minutes or until most of the liquid is absorbed.
