Ingredients


2 large sweet potatoes (8 oz. each), peeled and diced into 1/2 inch cubes (About 4 cups.)

2 cups red onion, diced

1 green bell pepper, diced


avocado oil spray (or extra virgin olive oil spray)

1 pinch of coarse sea salt


4 garlic cloves (4 tsp.), minced

2 tsp. smoked paprika

1 tsp. aleppo pepper or red pepper flakes


This was a recipe Leigh Pujado prepared for her friend Pony. It's a tasty and fiber filled way to start the day.

1. Prepare the first three ingredients, sweet potatoes, onion and bell pepper. Put them in a large bowl and combine.

2. Preheat oven to 425 degrees Fahrenheit.

3. Lightly spray or drizzle oil over the sweet potatoes and sprinkle salt over top.

4. Put parchment paper on two sheet pans.

5. Spread the veggies evenly onto the two sheet pans, try to make sure they're spaced out as much as possible.

Take the veggies out of the oven and pour them into a large bowl. Add the garlic, paprika and pepper and mix everything together.

6. Roast for 25 minutes.

8. Spread the veggies back out onto the sheet pans. Return to the 425 degree Fahrenheit oven and roast an additional 15-25 minutes. Sweet potatoes should be lightly browned and onions should start to caramelize.

9. For a hearty breakfast, divide the hash into two portions and serve with pasture-raised eggs and/or breakfast patties. For a lighter option, make four portions; enjoy one serving now and freeze the remaining for later.

10. When reheating, avoid the microwave to prevent the hash from becoming mushy. Instead, preheat the oven or toaster oven to 450 degrees Fahrenheit and reheat the hash for 2-4 minutes, or until hot.

Leftovers should be reheated in the oven or toaster oven. (Microwave will make it mushy).
