Ingredients
1 box (20 oz.) of Kodiak Power Cakes Buttermilk Flapjack & Waffle Mix
(This is 4 cups of the mix.)
5 large egg whites
1 large whole egg
3 cups fat free milk
(We used Fairlife Milk Fat-Free Ultra Filtered because it's lower in sugar and higher in protein.)
buttery cooking spray
2 1/2 cups (16 oz.) fresh strawberries with stems removed and chopped
2 1/4 cups (11 oz.) fresh blueberries
OPTIONAL
2 cups sugar free syrup
(We used Cary's Sugar Free Low Calorie Syrup.)
Make pancakes for everyone that are ready all at the same time. This version includes fresh fruit, 14 grams of protein and 4 grams of fiber in each 180-calorie serving. Top it with sugar-free syrup, and it's a great way to start your day.
This is so low in fat, you can put some butter on the top and it's still a nutritionally balanced meal.
1. Pour the entire box of Kodiak Power Cakes Buttermilk mix into a large mixing bowl.
2. In a separate bowl, whisk together the egg whites and whole egg.
3. Pour the eggs and milk into the Kodiak mix. Whisk it all together.
4. Lightly coat an 11 x 17-inch sheet pan with a lip all the way around. Preheat oven to 425 degrees Fahrenheit.

5. Chop up the strawberries and set them aside. Rinse the blueberries and set them aside.


6. Pour the Kodiak pancake mix into the sheet pan.

7. Sprinkle the strawberries and blueberries evenly across the entire pan.

8. Bake for 15-18 minutes. Then remove it from the oven and let it rest for 3-5 minutes.

9. Cut the pancakes into 16 slices. Top each serving with two tablespoons of sugar-free syrup if you want. Freeze any leftovers in freezer-safe containers for later.

Yield: 16 Servings

You can freeze individual portions for easy re-heating later.
Microwave on high for approximately 2 minutes. Cover with a damp cloth so it comes back fluffy and moist.
