Ingredients


1/4 cup light butter
(We used Land O Lakes Light Butter with Canola Oil.)

1/4 cup fat free sour cream

1 whole large eggs

2 large egg whites

1 cup light buttermilk
(We used 1.5% milkfat light cultured buttermilk.)

1/2 tsp. baking soda

1 cup cornmeal

1 cup whole wheat pastry flour

1/2 cup Splenda

2 Tbsp. white sugar

1/2 tsp. salt

Buttery cooking spray

OPTIONAL

2 cans (15 oz. each) chili
(We used Hormel Chili Vegetarian with Beans.)

OR any other chili recipe, such as the ones below.


A friend brought over a cornbread and chili dish for our tasting panel to try. We loved it and decided to make it faster by cooking the bread as waffles. It was a hit! We've included links to several of our chili recipes for topping below.

1. Melt the butter in the microwave. Pour it into a large mixing bowl with the sour cream and stir until they are combined.

2. Whip in the eggs and buttermilk until combined. Then whip in the remaining six ingredients, baking soda, cornmeal, pastry flour, Splenda, sugar and salt.

3. Heat up waffle iron or waffle maker.

4. Once waffle maker is hot, lightly coat with buttery cooking spray. Then add half a cup of the cornbread mixture to the waffle and cook until lightly browned. Makes 5 waffles.

5. Heat the chili up in a microwave for 2 minutes. Top each waffle with 3/4 of a cup of chili.

6. You can freeze the waffles for easy re-heating later.

Yield: 5 Servings, 1 Waffle and 3/4 Cup Chili Per Serving

You can freeze individual waffles for easy re-heating later.

Microwave for approximately 2-3 minutes. Keep the container open a little to allow steam to escape. Heat the chili up and add it on top.
