Sweet Potato Turkey Frittata

20 oz. sweet potatoes, mashed or cubed, already cooked
(We used Alexia Bite-Size Sweet Potato Puffs.)
8 large egg whites
2 large eggs
1 teaspoon salt
1 teaspoon pepper
1/4 cup skim milk
1/2 cup mozzarella cheese, part skim
Nonstick cooking spray
1 cup (6 oz.) turkey breast, shredded
This recipe was designed as a way to use up some of that leftover turkey after a holiday. But it was so good we started buying turkey year round.
There are two options for the sweet potatoes. You can peel and bake a regular sweet potato, or you can bake some frozen sweet potato puffs. The regular sweet potato is option 1a and the frozen sweet potato puffs is 1b.
1a. Preheat oven to 425 degrees Fahrenheit. Peel the sweet potato and cut it into cubes. Spread the sweet potato cubes across a rimmed baking sheet, then bake until tender, about 15 minutes. Flip the sweet potato cubesc once about halfway through. When finished, remove from the oven and set aside.
1b. Preheat oven to 425 degrees Fahrenheit. Spread the sweet potato puffs out on a single layer of an 11x17 baking sheet. Bake the entire bag (20 oz.) for about 16-19 minutes, stirring the puffs once about halfway through the cooking time. When finished, remove from the oven and set aside.
2. Whisk together the eggs, salt, pepper and skim milk until the eggs are fluffy. Stir the cheese in and set aside.
3. Heat a large, non-stick, OVEN-PROOF SKILLET over medium-high heat. Once it’s hot, lightly coat with buttery cooking spray. Pour the sweet potatoes and turkey in the skillet, using the spatula to break up the sweet potatoes. Stir for about two minutes, until it’s warm.
4. Pour the egg mixture over the turkey and sweet potatoes. Stir, mixing everything together until the eggs begin to set on the bottom.
5. Turn on the broiler and put the pan in the oven. Cook for 3-5 minutes, until the eggs are completely set and the top of the frittata is a light golden brown. Remove from the oven and let set for 5 minutes. Then divide up and serve.
Yield: 6 Servings
You can freeze individual portions for easy re-heating later.
Microwave for approximately 2 minutes. Keep the container open a little to allow steam to escape.
