1 1/3 cups low fat cottage cheese
1/2 cup fresh raspberries
2 Tbsp. sugar free syrup
(We used Cary's Sugar Free syrup.)
4 tsp mini chocolate chips
(We used Nestle/Toll House mini morsels.)
1/4 cup whipping cream
2 Tbsp. Splenda
(We used the box that measures cup for cup like sugar.)
1/4 tsp. almond extract
4 frozen whole grain waffles
(We used Vans Belgian Original Waffles.)
1. Thoroughly mix together the first 4 ingredients in a bowl, then set aside. This is the cottage cheese blend.
2. In a mixing bowl combine the whipping cream, Splenda and almond extract. Whip it together with an electric mixer for about 8-10 minutes until it's fluffy.
3. Toast the waffles according to package directions. The divide the cottage cheese blend and whipping cream evenly between the 4 waffles. Serve one per person for a snack or 2 per person for a meal.
