Ingredients
1 tsp. olive oil
3 cloves garlic, minced
1 package (9 oz.) fresh spinach
Non-fat cooking spray
2 cans (14.5 oz.) no salt added diced tomatoes, drained
14 slices SALT FREE multi-grain bread, cut in half
(We used Alvarado Street Bakery no salt Sprouted Multi-grain found in the organic foods section of the supermarket.)
2.5 cups fat free milk
OR
2.5 cups fat free LOW CARB milk
(We used Hood Carb Countdown Dairy Beverage - Fat Free and 75% less sugar.)
1/4 tsp. black pepper
4 egg whites
2 whole eggs
3/4 cup (3 oz.) shredded reduced fat Jarlsberg cheese
Optional
1/4 tsp ground red pepper
2. Coat a 13 x 9 inch baking dish with fat-free cooking spray and spread one can of drained & diced tomatoes over the bottom. Arrange 8 of the bread slices over the tomatoes. Cover with second can of drained tomatoes, spinach mixture and then the remaining 6 bread slices.
3. Combine milk, pepper and eggs in a large bowl. (For a bit of a spice kick add the ground red pepper into the milk and egg mixture.) Thoroughly mix with a whisk then pour over the bread slices. Sprinkle Jarlsberg cheese over the top.
4. Cover and refrigerate overnight (minimum 8 hours).
5. Preheat over to 375 degrees Fahrenheit. Uncover the egg, tomato & spinach strata. Bake at 375 degrees for 50 minutes or until set.
6. Divide into 8 servings and enjoy!
Yield: 8 Servings
Freeze individual servings for later.
Re-heat each serving approximately 3-5 minutes in the microwave.
Make sure to crack open the top of the container before you start to let hot air escape.
