Ingredients
1 tsp. avocado oil
1/2 cup oat flour
1/2 tsp. cinnamon, ground
1/2 tsp. baking powder
1/2 tsp. baking soda
2 Tbsp. vanilla protein powder

1/2 cup fat free milk
1/2 tsp. vanilla extract
2 Tbsp. sugar free syrup
(We used Cary's Sugar Free Low Calorie Syrup.)
1 tsp. cold butter chunks
2 Tbsp. Greek yogurt
2 Tbsp. vanilla protein powder
(We used RYSE Jet-Puffed Loaded Protein Marshmallow Flavor.)

1 Tbsp. fat free milk
1/4 tsp. cinnamon, ground
1 Tbsp. monk fruit sweetener (or other zero calorie sweetener)

This single-serve protein muffin bakes in a ramekin and hits like a cinnamon roll without the regret. 372 calories, 35 grams of protein, and only 5 grams of sugar. It's basically dessert that also works for you.
Cinnamon Protein Roll
1. Preheat oven to 350°F. Grease a ramekin with the avocado oil and set aside. (The ramekin we used was 4 inches across and 2 inches deep.)

2. Mix dry ingredients: In a bowl, oat flour, cinnamon, baking powder, baking soda, and 2 tablespoons of the vanilla protein powder. Stir to combine.



3. Add wet ingredients: Using a fork, mix in fat-free milk, vanilla extract, and sugar-free maple syrup until just combined. Pour batter into the prepared ramekin.


4. Add butter and bake: Cut the cold butter into small chunks and press it into the top of the batter.


5. Bake for 22 to 25 minutes, until firm and lightly browned on top.

6. Make the topping: While the muffin bakes, stir together the yogurt, the remaining 2 tablespoons vanilla protein powder, 1 tablespoon fat-free milk, 1/4 teaspoon ground cinnamon, and monk fruit sweetener or zero-calorie sweetener in a small bowl until smooth.


7. Cool and serve: Let the muffin cool for 5 minutes. Run a knife around the edges and turn it out of the ramekin. Spoon topping over the muffin and serve.
