Ingredients
24 oz. (3 cups) fat free cottage cheese
1 packet (1 oz. or 10 tsp.) taco seasoning
(We used Old El Paso Taco Seasoning Mix Original.)
1 cup low fat cheddar cheese, shredded
1 cup regular cheddar cheese, shredded
1 can (10 oz.) Ro*Tel Diced Tomatoes & Green Chilies, No Salt Added, Original
(Or the Ro*Tel of your choice.)
CHIPS OF YOUR CHOICE
HOMEMADE TACO SEASONING INGREDIENTS
1 Tbsp. chili powder
1 1/2 tsp. ground cumin
1/2 tsp. sea salt
1 tsp. ground black pepper
1/2 tsp. ground paprika
1/4 tsp. garlic powder
1/4 tsp. onion powder
1/4 tsp. crushed red pepper flakes
1/4 tsp. dried oregano
This is a creamy queso you can eat without guilt. Using cottage cheese as the base, you can serve this at a party, and guests will love it. We kept it warm in a crock pot. It was so popular we had to refill it halfway through the party.
1. Pour a 24 oz. container (3 cups) of fat free cottage cheese into a food processor.

2. Add 1 packet of taco seasoning OR mix together the homemade taco seasoning mix. Blend everything together until it's smooth, about 1-2 minutes.



3. Add the cheese and process just until combined, another minute.


4. Pour the queso into a microwave-safe bowl. Then microwave on high for 60 seconds, take out and stir the Ro*Tel into the mix.
5. Repeat heating. Microwave on high for 60 seconds, take out and stir until entire mixture is hot and the cheddar cheese is fully melted and incorporated into the mixture. Typically, this takes heating it 5-6 times, 60 seconds at a time.
6. Serve with the chips of your choice; we like tortillas or scoops.
Yield: 20 Servings, 1/4 cup per serving.
