Ingredients


1 Tbsp. olive oil

1 red or yellow bell pepper, chopped

1 green bell pepper, chopped

2 cups red onion

1 cup yellow onion


1 tsp. garlic powder

1/2 tsp. chipotle chili powder

1 tsp. chili powder

1 tsp. salt

1 tsp. pepper

1 tsp. cumin, ground

1 tsp. cayenne pepper (Only put this in if you want it to be SPICY.)

2 Tbsp. tomato paste


6 cups low sodium vegetable broth

2 cans (14.5 oz. each) no salt added petite diced tomatoes

3/4 cup dried black beans

3/4 cup dried Pinto beans

3/4 cup LePuy Lentils

2 large jalapenos (1/2 cup), chopped

2 cups of corn, no salt added canned or frozen


OPTIONAL Toppings
(Below is a list of toppings for EACH bowl.)

2 Tbsp. avocado, chopped

2 Tbsp. vegan cheddar cheese, shredded

2 Tbsp. vegan sour cream
(We used Tofutti Milk Free Better than Sour Cream.)

5 chips Tostitos Scoops Whole Grain, crumbled

fresh cilantro, chopped


It's a tortilla in a bowl.

Vegan Lentil Tortilla Soup - Instant Pot

1. Turn the insta-pot on saute. Stir together the olive oil, bell peppers and onions. Saute until soft, about 5-7 minutes.

2. Stir in the next eight ingredients, garlic powder through tomato paste and continue to saute for another minute. (If you don't want it to be VERY SPICY, don't add the cayenne pepper.)

3. Stir in the next seven ingredients, vegetable broth through corn.

4. Cover and cook on high for 24 minutes. When it's finished, set the valve to quick release.

5. The toppings are optional. If you are referring to our nutritional breakdown, the ingredient list of toppings are for ONE bowl of tortilla soup.

Yield: 8 Servings, about 1 3/4 cups each

This is a Freezer Friendly Recipe!

You can freeze individual portions for easy re-heating later. Don't freeze the toppings with the soup, they will not reheat well.

Microwave for approximately 3-4 minutes. Keep the container open a little to allow steam to escape. Add the toppings on after it's hot.
