Ingredients


5 large carrots, (about 7 inches long each), peeled and coarsely grated or cut into match sticks

2 medium gala or Cripps Pink apples (about 9 oz. each), unpeeled, cored and coarsely grated

1/4 cup slivered almonds, toasted

1/4 cup chopped dates or regular raisins

3 Tbsp. fresh lemon juice

1 tsp. olive oil

1 tsp. ground cumin

1/4 tsp. ground coriander

1/4 tsp. ground cinnamon

1/4 tsp. freshly ground black pepper


The cumin, coriander and black pepper combine with the sweet of the carrots and apples for a salad with just a little bite. Enjoy it with a nice sandwich for lunch or as an appetizer before dinner.

1. Combine all the ingredients in a large mixing bowl and cover. Refrigerator at least half an hour before serving. When ready, bring to room temperature and serve.

Yield: 8 Servings, 1/2 a Cup Per Serving
