Ingredients


1 can (15.25 oz.) whole kernel corn (no salt added)

1 can (14.5 oz.) diced tomatoes (no salt added)

1 unpeeled diced medium cucumber

1/2 cup white onion diced (approximately 1/4 onion)

1/2 minced, seeded jalapeno

1 minced garlic clove

1 Tbsp. basil leaves

3 Tbsp. lime juice

1/4 tsp. ground pepper


1. Mix all the ingredients together in a large bowl. Put it in the refrigerator and chill for one hour before serving.

2. Serve. (How easy is that?)

Yield: 4 Servings
