Ingredients


12 butternut squash (about 5 pounds squash total), peeled and cubed

1/4 cup lite butter, cubed

3 Tbsp. fat free half-and-half cream

2 Tbsp. sugar free honey
(We used Honey Tree's Sugar Free Imitation Honey.)

2 tsp. dried parsley flakes

1/2 tsp. salt

1/8 tsp. dried thyme

1/8 tsp. black pepper, coarsely ground


The original version of this recipe from Taste of Home was a little high in fat and sugar. So we made a couple simple changes and ended up with this tasty side dish.

1. Fill a large saucepan with 1 inch of water. Bring to a boil, then add the squash, cover and cook for 10-15 minutes, until tender.

2. Drain remaining water out of the saucepan. Add the remaining ingredients and mash everything together. Serve with a sprig of thyme for the garnish.

Yield: 10 Servings

You can freeze individual portions for easy re-heating later.

Microwave for approximately 2 - 2.5 minutes. Keep the container open a little to allow steam to escape.
