Ingredients


2 Tbsp. sweetened flaked coconut

2/3 cup pure coconut water

1/3 cup fat free half and half

1/2 cup crushed ice

1 medium banana (About 4 oz. with peel removed.)

1 1/2 tsp. instant coffee

2 Tbsp. flaxseed, ground

1 tsp. vanilla extract

2 Tbsp. vanilla protein powder
(We used GNC 100% Whey Protein Vanilla.)

OPTIONAL

1 or 2 Tbsp. Splenda, stevia or Swerve (To taste.)


I was looking for a way to get my coffee fix, flax seed, protein and morning fruit quickly. This recipe combines many of my favorite things into one drink that tastes great.

1. Put all the ingredients in a blender and mix about 1 minute, until thoroughly combined.

2. Divide the mixture into two servings. Keep in mind that right after mixing, there will be a lot of air bubbles in it. Because of the bubbles, it will divide into two servings of about 2 cups each. If you let the air bubbles pop, the volume decreases.

3. Sprinkle a little coconut on the top as a garnish.

Yield: 2 Servings, Serving Size about 2 Cups Each
