Ingredients
1 cup unsweetened vanilla almond milk
1 cup no sugar added vanilla ice cream
(We used Breyers No Sugar Added Vanilla.)
2 Tbsp. Splenda
1/4 tsp. peppermint extract
1/3 cup protein powder
(We used GNC Pro Performance 100% Whey Protein - Vanilla Cream.)
6-10 drops of green food coloring
sprig of mint for garnish
This was inspired by the Girl Scouts. They came by one day selling cookies and I kept thinking about their Thin Mints. I wanted the taste, but I needed protein and didn't want all the sugar. It took a few tries, but eventually I came up with this thin mint protein shake.
1. Put all the ingredients in a blender and mix about 1 or 2 minutes, until thoroughly combined. Add the sprig of mint as a garnish.
2. Divide and store half in the refrigerator if you're looking for less calories. Can store up to 2 days in refrigerator if covered.
