Ingredients


2 whole wheat English muffins, split and toasted

2 Tbsp. fat free mayonnaise

3 plum tomatoes, cut into 1/4-inch slices

6 fresh basil leaves, thinly sliced

1/8 tsp. pepper

1/2 cup part skim mozzarella cheese, shredded


When you're in the mood for a snack, make this savory sandwich to tide you over. Eat two for a light lunch.

1. Toast the English muffins. Then spread 1/2 a tablespoon of mayonnaise on each one.

2. Put the muffins on a baking sheet. Top with the tomatoes, basil, pepper and cheese evenly divided between them. Broil with the rack 4 inches from the heat for 3-4 minutes, or until the cheese is melted and slightly browned.
