Ingredients


1.5 lb. boneless, skinless turkey breast(s) cooked and cut in 1/2 inch cubes

1/2 cup fat-free Miracle Whip

1/2 cup fat-free plain or vanilla yogurt
(We used Dannon Light 'n Fit Carb Control Vanilla Cream.)

1/3 cup chopped scallions

1/3 cup chopped walnuts
(If desired you can lightly toast the walnuts.)

3 Tbsp. dried cranberries

1.5 Tbsp. dijon mustard

1/4 tsp. black pepper (less or more to taste)

8 cups romaine lettuce, rinsed and chopped


1. Combine all the ingredients (except lettuce) in a bowl. Mix well.

2. Divide lettuce into 4 bowls and top each with 1 cup of turkey salad mixture. Then serve!

Yield: 2 Servings
