Ingredients


1 can (8 oz) Chunk Pineapple in unsweetened pineapple juice

4 skinless, boneless chicken breasts (Average weight is 4 oz. raw per chicken breast.)

1/4 can calcium enriched frozen concentrated orange juice

4 tsp cinnamon powder

1 can (15 oz.) no salt added peas
(Serving size is 1/4 can per person.)


1. Rinse off chicken breast and place in 2 quart shallow baking dish. Pour pineapple and frozen orange juice concentrate in with chicken. Sprinkle 1 tsp. of cinnamon on top of each chicken breast.

2. COVER and bake at 375 degrees for 45 minutes or until chicken is done. (Chicken is done when it is no longer pink inside.)

3. Heat up peas and serve.

Yield: 4 Servings
