Ingredients


1/2 cup uncooked jasmine rice

2 tsp. sesame oil

2 cloves minced garlic

2 tsp. fresh minced ginger

1 1/4 lb. large shrimp, peeled and de-veined

2 Tbsp. reduced-sodium soy sauce

2 cups sliced zucchini


1. Cook rice according to package directions, without salt and butter.

2. Heat the oil in a large skillet over medium-high heat. Add the garlic and ginger and cook for two minutes.

3. Add the shrimp and zucchini and cook for another five minutes. The shrimp will turn bright pink when cooked through and the zucchini should be crisp and tender.

4. Stir in soy sauce and serve hot.

Yield: 2 Servings
