Ingredients


2 lbs. Pork Tenderloin

2 tsp. dried rosemary

2 tsp. lemon juice

1/2 tsp. black pepper

3 minced garlic cloves

1/4 cup maple syrup

2 sweet potatos


1. Combine rosemary, lemon juice, black pepper, garlic and rub over the trimmed pork tenderloin.

2. Cover baking pan with foil and spray with non-stick cooking spray. Place pork on pan and bake at 450 degrees for 15 minutes.

3. Brush pork with maple syrup and bake an additional 10 minutes or until meat thermometer shows 160 degrees.

4. When you place pork back in oven, clean sweet potatos. Poke holes in sweet potatos with fork and wrap them each in a paper towel. Microwave on high for 6 to 8 minutes. Sweet potatos may feel firm when done, let stand 5 minutes to soften.

5. Divide pork into 4 servings. Cut sweet potatos in half. Each half makes one serving.

Yield: 4 Servings
