Ingredients


5 slices whole wheat bread, lightly toasted and crusts removed

2 Large Eggs

3 Large Egg Whites

1 cup fat free milk

1 can (15 oz.) cream style corn

1/4 cup Splenda or Stevia

buttery cooking spray

1 Tbsp. butter


This is good comfort “country” food. Simple to make and a real crowd pleaser.

1. Preheat oven to 350 degrees Fahrenheit. Lightly toast the bread. Then cut it into 1/2-inch squares.

2. In a mixing bowl beat together the eggs and milk. Then stir in the can of corn and Splenda or stevia.

3. Lightly coat a 9-inch square (or 10x8 rectangular) baking dish. Spread the bread across the bottom of the dish. Then pour the egg and corn mixture evenly over top the bread.

4. Drop small pieces of butter across the top. Then bake, uncovered for 50-60 minutes, until a knife inserted near the center comes out clean.

Yield: 6 Servings
