Ingredients


2 cups strawberries, sliced

2 Tbsp. Splenda

1 1/3 cups fat free ricotta cheese

3 tsp. sugar free honey,
(We use Honey Tree's Sugar Free Imitation Honey.)

1/2 tsp cinnamon, ground

2 tsp. lemon zest

1 graham cracker sheet, crumbled
(We used Nabisco Honey Maid Low Fat Honey Grahams.)


All the rich filling taste of a cannoli surrounded by strawberries. You can substitute any other seasonal fruit you like to give it your own special touch.

1. Clean and chop the strawberries, then sprinkle 2 tablespoons of Splenda over the top, cover and refrigerate.

2. In a small mixing bowl stir together the ricotta cheese, honey, cinnamon and lemon zest.

3. Divide the ricotta mixture between four dessert bowls (about 1/3 cup each), top each one with 1/2 a cup of strawberries and sprinkle the crushed graham cracker over each one.

Yield: 4 Servings
