Ingredients


1 1/2 cups all-purpose flour

1 cup whole wheat flour

1/2 cup (2.7 oz) chopped crystallized ginger

1 tsp. baking powder

1/2 tsp. baking soda

1/4 tsp. salt

1/2 tsp ground ginger

1/2 cup Splenda no calorie sweetener
(We used the box that measures cup for cup like sugar.)

1/2 cup sugar

1/2 cup (4 oz.) lite apple sauce

1/4 cup vegetable oil

1 tsp. grated lemon rind

1 Tbsp. lemon juice

1/4 tsp. vanilla extract

Non-fat cooking spray


1. Whisk together the first 7 ingredients, flour, whole wheat flour, crystallized ginger, baking powder, baking soda, salt and ginger in a mixing bowl.

2. Make a depression in the middle of the mixture and add remaining ingredients, (Splenda through vanilla extract), mixing them together until moist. You may need to knead it with your hands to thoroughly combine.

3. Cover the dough and chill in the refrigerator for 1-2 hours.

4. Preheat the oven to 350 degrees Fahrenheit.

5. Coat hands lightly with flour and shape dough into 16 cookies (about 2 Tbsp. each). Place cookies on a baking sheet sprayed with non-fat cooking spray.

(To help in the cleanup and avoid possibly burning the bottom of the cookies, you can also bake them on parchment paper spread out on the cookie sheet.)

6. Bake at 350 degrees Fahrenheit for 15 minutes or until cookies are lightly browned. Cool on a wire rack and serve.
