Ingredients


buttery cooking spray

1 (6-inch) corn tortilla

1/4 cup red onion, chopped

1/2 green bell pepper, chopped

3 Tbsp. low sodium black beans, drained and rinsed

2 Tbsp. mango, chopped

1/2 lime, zested and juiced

1/4 tsp. cumin, ground

1/4 tsp. chili powder

1 large egg

2 tsp. salsa verde

3 Tbsp. diced tomatoes

1 Tbsp. cilantro, chopped


Huevos rancheros is a traditional dish from rural Mexico. It means ranchers eggs. It's a refreshing and crisp take on eggs and vegetables.

1. Heat a non-stick frying pan over medium heat. Lightly coat the tortilla with buttery spray on both sides. Then cook the tortilla for 30 to 60 seconds on each side. Put on a serving plate and set aside.

2. Lightly coat the skillet with buttery spray. Mix in the onion, bell pepper and beans. Cook for 3-4 minutes, until the veggies soften. Then stir in the mango, lime juice, lime zest, cumin and chili powder. Cook for 2 more minutes, then pour it over the tortilla.

3. Lightly coat the skillet with buttery spray. Fry the egg until it's set, then place on top of the veggies. Top that with the salsa verde, diced tomatoes and cilantro. Eat and enjoy.

Yield: 1 Serving
