Ingredients


2 cups whole wheat flour

2 tsp. baking powder

2 tsp. dried oregano

1 tsp onion powder

1/2 tsp. no-salt, salt free alternative

1 large whole egg

1 large egg white

1 1/2 cups milk, non fat

2 Tbsp. olive oil1/2 lb. diced ham
(We used Hormel Cure 81 Diced Boneless Ham.)

1 bell pepper (green, red yellow...your choice), diced

1 cup mozzarella cheese, fat free, shredded


Non-stick olive oil cooking spray

8 1/2-inch-thick pineapple rounds

2 cups pasta sauce
(We used Classico Four Cheese Pasta Sauce.)

1/2 cup mozzarella cheese, fat free, shredded  (For Topping)


Try a savory waffle topped with a sweet ring of pineapple. We've put the nutritional breakdown of the full recipe and then one without the pasta sauce. That way you can put whatever pasta sauce you like on top and still get the correct nutritional information.
This recipe is higher in salt. If you're on a low sodium diet, you should consider another option.

1. Get two large mixing bowls. In one bowl stir together the five dry ingredients, flour, baking powder, oregano, onion powder and no-salt. In the second bowl, whisk together the four wet ingredients, whole egg, egg white, milk and olive oil.

2. Slowly pour and stir the wet ingredients into the dry ingredients, until it's mixed together. Then fold in the ham, bell peppers and 1 cup of cheese.

3. Heat a waffle iron and lightly spray with non-stick cooking spray. Spread 1/4 cup of batter in the waffle iron and cook until set and golden brown. That should take between 4 and 5 minutes. Store finished waffles in the oven, heated to 200 degrees Fahrenheit.

4. While the waffles are cooking, heat the pasta sauce in a microwave or on the stove. Once the waffles are finished, put the pineapple rounds in the waffle maker and cook until tender and slightly charred.

5. Serve each waffle with a pineapple round, 1/4 cup pasta sauce and 1 tablespoon mozzarella cheese.

This is a Freezer Friendly Recipe!

1. To make this recipe freezer friendly, just cook the waffles and store each one in a microwave safe container. Then reheat for approximately 1-2 minutes. Once thawed, place in an oven heated to 375 degrees Fahrenheit for 10 minutes or a toaster oven to crisp it up.

2. Heat up a serving of the pasta sauce while the waffle is re-heating. Place a pineapple round on the top of the waffle, followed by the heated sauce and then the cheese.

Yes you can cook the pineapple and freeze each slice with the waffle if you want, but we found that tends to make the pineapple a little dry when thawed out and cooked.
