Ingredients


1/2 cup whole wheat flour

1/4 cup all-purpose flour

1 tsp. Splenda

1 tsp. baking powder

1/4 tsp. baking soda

4 large egg whites

1/2 cup 1% buttermilk

2 tsp. canola oil

7 oz. (1 cup) frozen peas, thawed

6 oz. boneless ham, diced

fat free buttery spray

8 Tbsp. fat free sour cream

2 Tbsp. fresh chives, diced


This recipe is high in sodium. If you're on a low sodium diet, you should choose another option.

1. Heat a non-stick pan over medium heat.

2. Whisk together the dry ingredients, whole wheat flour, all-purpose flour, Splenda, baking powder and baking soda in a mixing bowl.

3. Then whisk together the egg whites, lowfat buttermilk and canola oil. Pour the buttermilk mixture over top the dry ingredients and mix until combined. Then stir in the peas and diced ham.

4. Lightly coat the non-stick pan with fat free buttery spray. Then pour a generous 1/4 cup of pancake batter in the pan and let cook until bubbles start to appear around the edges, about 1 minute and 30 seconds. Flip the pancake and cook for another 1 to 2 minutes.

5. Mix together the sour cream and chives in a small bowl, then put 1 tablespoon of the sour cream mixture on top of each pancake when you serve it. Lightly sprinkle some extra chives over the top for presentation.

6. If you want to freeze these for later, skip the sour cream and chives step. Simply freeze two pancakes per container. Add a tablespoon of fat free sour cream and some chives over the top when you heat it up.

Yield: 4 Servings - 2 Pancakes Per Serving

You can freeze individual portions for easy re-heating later.

Microwave for approximately 2 minutes. Keep the container open a little to allow steam to escape. Then add 1 tablespoon sour cream and some chive on top of each pancake.
