Ingredients


2 slices of whole grain bread
(We used Nature's Own Wheat & Fiber.)

2 Tbsp. fat free ricotta cheese

2 Tbsp. sugar free blackberry jam (We used Smuckers.)

1 tsp. honey

1/2 Tbsp. sliced almonds

1/2 tsp. ground cinnamon

1/4 cup egg substitute
(We used Egg Beaters.)

1 Tbsp. fat free half & half

1 Tbsp. Splenda no calorie sweetener
(We used the box that measures cup for cup like sugar.)

Optional

1/2 cup fresh berries
(We used grapes.)


1. Spread the ricotta on one of the bread slices. Spread the blackberry jam on the other slice, drizzle with honey and then top with almonds. Put the two slices together.

2. Mix together the remaining ingredients (cinnamon, egg substitute, half & half and Splenda). Dip the bread into the egg mixture and thoroughly cover both sides.

3. Coat a non-stick pan with fat-free cooking spray and cook the french toast over medium heat until the bread is lightly browned. Flip over and brown the other side.

4. Slice in half and serve with fresh berries, sugar free syrup or both.

Yield: 1 Serving
