Ingredients


4 egg whites

2 whole eggs

Pinch of black pepper

1 Package (6 oz.) Jones Lean Choice Canadian Style Bacon

4 Thomas' English Muffins (Sourdough)

4 Slices Fat-Free American Cheese

Parkay Buttery Spray

Non-stick cooking spray

4 containers (6 oz. each) of yogurt. We like the Dannon regular or Fat-Free. Make sure to choose yogurt with "live and active cultures.


If you are looking to reduce your sodium intake do NOT include the slice of cheese. This will reduce the total sodium in this breakfast to a more reasonable 835 mg. To cut the sugar in half, choose Greek yogurt instead of traditional yogurt. .

1. Beat together all eggs and black pepper.

2. Coat pan with non-stick cooking spray. Place muffins in toaster.

3. Heat up Canadian bacon and set aside.

4. Cook scrambled eggs.

5. Spray muffins (once toasted) with Parkay Buttery Spray. Put eggs, bacon and cheese (if you're using cheese) on muffin.

6. Serve.
