Ingredients


1/2 green bell pepper diced

1/3 cup diced red onion

1 cup sliced mushrooms

1 1/3 cup Morningstar Grillers Burger Style Veggie Recipe Crumbles

10 egg whites

2 whole eggs

4 Tbsp. nonfat sour cream

1 diced tomato


1. Cut out seeds from green bell pepper and dice. Also dice red onion and mushrooms.

2. Use non-stick cooking spray in pan and saute diced vegetables until brown (approximately 3 to 4 minutes). Remove from pan and set aside.

3. Heat up Morningstar Veggie Crumbles for 2 minutes in microwave.

4. Beat together eggs. Use non-stick cooking spray in pan and pour eggs in. Add sauted vegetables and Morningstar Veggie Crumbles. Cook until bottom is firm (approximately 2-3 minutes) and fold in half.

5. Let cook another minute and then flip over. After approximately 1 more minute the omelette should be cooked thoroughly. Check by using spatula to cut in half and make sure it is no longer runny.

6. Serve up each half of omelette, top with fat-free sour cream and diced tomatos.

Yield: 2 Servings
