Ingredients


buttery cooking spray

1 1/2 cups quick cooking oats

1/4 cup wheat germ

1/4 cup ground flax seed

1/3 cup (1 scoop) vanilla flavored whey protein powder
(We used GNC 100% Whey Protein Powder Vanilla Cream.)

1 tsp. cinnamon, ground

1/2 tsp. salt

1/4 cup PURE PB powder
(We used Crazy Richard's PURE PB, Pure Pressed Peanuts.)

3 medium bananas (6.5 oz. with skin)

2 Tbsp. sugar free honey
(We used Honey Tree's Sugar Free Imitation Honey.)

1 tsp. vanilla extract

1/4 cup creamy peanut butter
(We used Smart Balance Creamy Natural Roast.)


We love peanut butter, but it's hard to make a peanut butter bar that isn't full of fat. Once we discovered Pure PB peanut powder, we could keep all the taste without the fat. This isn't overly sweet like some bars and it makes a great grab and go breakfast.

A version of this recipe appeared in allrecipes.com, but it was too high in fat.

1. Preheat oven to 375 degrees Fahrenheit. Get an 8x8-inch baking dish and line it with aluminum foil. The edges of the foil should extend over the sides of the pan. Then lightly coat the foil with buttery cooking spray.

2. In a mixing bowl combine the next seven ingredients, oats through Pure PB powder. In a separate large mixing bowl, mash the bananas together and stir in the honey and vanilla extract.

3. Stir the dry ingredients into the wet ingredients until thoroughly combined. Then spread it into the prepared baking pan. Bake in the preheated oven for 20 minutes. Then take out of the oven and cover with the 1/4 cup creamy peanut butter. Return to the oven and bake for approximately 10 more minutes, or until the edges are set and lightly browned.

4. Remove from the oven and let cool for 5-10 minutes. Use the aluminum foil to take the bars out of the pan. Cut into 8 bars. Wrap individual bars in plastic or place in airtight container and store in the refrigerator up to 5 days.

You can freeze individual bars for easy re-heating later. Make sure they're tightly sealed inside freezer safe containers.

Microwave each bar for approximately 1 minute and enjoy.
