Ingredients


1 package (10 oz.) frozen chopped spinach, thawed and drained

6 strips lower sodium bacon

4 Tbsp. onions, diced

4 oz. fat free cream cheese

6 Tbsp. fat free ranch dressing
(We used Hidden Valley Fat Free Ranch.)

1/2 cup fat free mayonnaise

1 cup (4 oz.) water chestnuts, diced

5 (12 inch) whole wheat flour tortillas


1. Thaw the spinach, drain out the water and set aside.

2. Cook the bacon over medium heat until crispy. Drain the oil off and chop the bacon into small pieces.

3. Dice the onions and put all the ingredients except the tortillas into a large mixing bowl. Stir together until thoroughly combined.

4. Heat a large non-stick pan over high heat, then warm the tortillas up about 10-15 second per side. They'll start to expand and quickly brown. Spread 1/2 cup of spinach mixture evenly over each tortilla, then roll-up, cover and refrigerate.

5. Once you're ready, cut each tortilla into about 7 pieces, lay flat and serve.

Yield: 35 Servings (Each tortilla is cut into 7 servings.)
