Ingredients


4 lbs. carrots, cut diagonally into 1/4 inch thick slices

1/4 cup water

1 Tbsp. grated peeled fresh ginger

2 Tbsp. butter

1/3 cup sugar free syrup
(We used Cary's Sugar Free Syrup)

1 Tbsp. apple cider vinegar

1 tsp. No Salt, Sodium Free Replacement

1/2 tsp. black pepper

1/3 cup fresh parsley leaves, chopped for garnish


1. Heat a 5-7 quart non-stick sauce pot on medium. Add in and stir together the carrots, water, ginger and butter. Cover and cook for 10 minutes, stirring occasionally.

2. Add the sugar free syrup, vinegar, No Salt and black pepper. Increase heat to medium-high and boil for 8-10 minutes or until syrup is thick and carrots are tender. Continue stirring occasionally.

3. Serve carrots in small bowls and garnish with parsley.

Yield: 8 Servings
